Versatile Commercial Chinese Smokehouse and Roaster 

Town’s MasterRange smokehouses blend Asian and western techniques to produce juicy, lean barbecue, and smoked products. Our commercial Chinese smokehouses handle a wide variety of applications, including: smoking fish, meat, sausage, cheese and jerky, plus barbecue. Fowl and suckling pig can be hung and barbecued, using optional barbecue utensils. Fish or roasts can be placed on optional racks; use the woodchip box (sold separately) to “cold smoke.” These commercial Asian smokehouses barbecue quickly, while producing a delicious “cold smoke” flavor.

Available in exterior finishes of 304 stainless steel (SS models) or galvanized steel (STD models). They have a double-wall insulated body, durable cast iron door latches, and a stainless steel drip shelf above, that protects the control system. All of these components help ensure a long-lasting and durable product. The units come standard with a pilot safety system and solid brass gas valve, with a stay-cool metal handle. A pressure regulator and stainless steel water pan are supplied. These commercial Chinese smokehouses are mounted on tubular stainless steel legs, with adjustable feet.

Versatile

Town’s 40-year-old design combines traditional Asian smoking, and roasting, with some Western cooking styles. You can smoke or roast virtually any product, using a vast array of hanging and rack accessories 

Easy Operation

All that’s needed is a gas connection and nearby water source. Town’s field-proven design is simple to install and operate. Turn the gas valve on, light the pilot and adjust the thermostat. These units come standard with a safety pilot system, that prevents gas buildup in the event of pilot light blow out.  

Hot

Tube burners deliver 45,000-75,000 BTUs of power, depending on the model size. These units incorporate an analog thermostat for easy temperature control, between 175-550° F.

Steamy

Town’s unique water pan design creates an optimal cooking environment. The dual-purpose water pan must be filled at all times, to catch fat drippings to prevent grease fires, and create an optimally moist cooking environment, that prevents shrinkage.

Smoky

Strategically placed interior drip shields vaporize grease drippings, creating smoke and enhancing flavor. Excess grease is funneled into the drip pan to prevent grease fires. Enhance smoking capabilities with the optional wood chip box, for wood smoking between 30-60 minutes of smoking time (depending on the model size).

Reliable

Heavy-duty dual door latches compress a durable metal spring seal around the perimeter of the door, that never needs to be replaced. The smokehouses have shielded and protected burners, which are less prone to clogging. 

Insulated Construction

The units have a durable, aluminized interior that reflects heat, instead of absorbing it. The double-wall fiberglass insulated body, durable cast iron door latches, and stainless steel drip shelf that protects the control system, all help to ensure a long-lasting and durable product.

Width

Available in 24″, 30″, and 36″ widths.  All smokehouses have an overall depth of 31″ and height of 71″.

Doors are mounted on NSF lift off hinges, configurable to be left hinged (L models) or right hinged (R models).

Choose between food grade 304 stainless steel (SS models), or a more budget-friendly galvanized steel (STD models).

How does the unit generate smoke?

As the food cooks, fat drippings hit the interior drip shields to create a natural smoking effect. The optional chip box can be purchased and used to generate wood smoke. 

How long does the chip box last? What's the maximum smoking time?

  1. SM-24 chip box – Item # 244000 – Approximately 30 minutes
  2. SM-30 chip box – Item # 244001 – Approximately 45 minutes
  3. SM-36 chip box – Item # 244002 – Approximately 90 minutes

Wood chips can be soaked in water for less intense, but longer lasting smoke generation.

An extra chip box can be purchased to quickly swap out a depleted chip box with one containing fresh chips.

What kind of wood chips should I use?

For best results, Town recommends a mix of solid and fine wood chips. Pellets are not recommended.

Does this have to go under a hood? Is an ansul system required?

The unit is tested and designed to perform optimally while underneath a hood.  For optimal performance and safety, we recommend that it be placed underneath a hood, with fire suppression. 

It may also be required by local code. Town suggests you contact your local authority (AHJ) for permissibility.  

Can this unit be used in a mobile food environment such as food trucks or catering vans?

This unit is rated and listed for static indoor use only. Town’s one-year limited warranty is void if used in any other manner.  However, it has been done with success. We suggest you contact your local authorities (AHJ) for permissibility.

Can I operate the unit without a filled water pan, or without the water pan?

The water pan must be installed and filled during operation. A dry water pan can lead to grease fires!

A filled water pan prevents grease flare-ups, and creates a moist environment to simultaneously roast and smoke.  

Is this unit thermostatically controlled?

Yes, it has an analog thermostat with a range of 150° F to 550° F.  Heat in the oven is distributed through natural convection, and it’s normal for there to be some temperature variation within the cabinet. For even cooking, product may need to be rearranged during the cooking process.

Can this unit be used outdoors?

This unit is rated, listed and tested, for static indoor-use only. It is to be used in commercial settings only, and Town’s one-year limited warranty is void if used in any other manner. However, it has been done with success. We suggest you contact your local authorities (AHJ) for permissibility.

Can this unit be used for hot smoking?

Hot smoking is possible when operated properly. Place the chip box in between the door and the water pan. Turn the unit on and set the thermostat for 350° F. The pilot runner will ignite the chips after about 10 minutes.

During longer cook times, the water pan may need to be refilled with water. The chip box has a limited run time, which depends on the size and type of chips. Continuous American-style smoking may require more than one load of wood chips. It’s recommended to purchase an extra chip box to quickly swap out a depleted chip box with one containing fresh chips.

Can this unit be used for cold smoking?

Limited cold smoking is possible. Under hot smoking conditions, the pilot runner will ignite the chips after about 10 minutes. For cold smoking, the chip box may need to be lit externally with a lighter or a piece of charcoal.

Can this unit be converted from natural to propane or vice versa?

Field-conversion is possible, and must be done by a licensed gas plumber. Visit our resource center for a guide including a required parts list. 

Can this unit be used to roast pigs or ducks?

The unit can be used to roast any type of meat. However, if you desire crispy skin on your cooked pig or duck, our PR-36 pig roaster is the suggested appliance.  

Is a thermometer available?

Although temperatures within the cabinet will vary, a thermometer for fixed point temperature readings can be added. Please inquire with Town. 

What is the lead time on this unit?

Lead time usually varies from 1-3 weeks based on shop load. Inquire with Town for a more precise lead time.  Note that lead times will vary day to day. Expedited options may be available. 

What accessories come with the unit?

The unit comes with six skewers, a water pan, safety grate, and upper and lower baffle plates. A variety of hooks, oven racks and roasting bars are available to complement the smokehouse’s capabilities.  To mount the optional oven racks, a set of rack guides must be installed in the cabinet.

How should the unit be cleaned?

It is always good practice to empty and clean the water pan when done, and start with fresh water for your next cook cycle. Clean and degrease the cabinet, combustion chamber, and cooking accessories regularly. Excess grease buildup is dangerous and can lead to grease fires.

Natural, non-toxic (such as citrus or vinegar based) cleaners are strongly recommended for use on interior surfaces.

When cleaning exterior stainless steel surfaces, scrub in the direction of the grain.

What is the product warranty?

Ranges come with Town’s one-year limited warranty.

How do I schedule a service call to repair a range?

Initiate equipment repair requests by filling out our repair request form.

Field warranty service is only available for heavy equipment. If the issue is warranty related, Town will need to give approval before any work is done. Invoices for unapproved work will not be honored. Service is covered during normal business hours: Monday-Friday 8 a.m. to 6 p.m. If it is covered under warranty, and parts are needed, we will ship the part to the end-user free of charge. Town must be contacted so we can initiate the service call.

In instances of claims which we do not believe are covered, the end-user or dealer must call in their own service company. If the service report indicates that it is covered under warranty, it will be reimbursed at the standard labor rate. This is at Town’s sole discretion.

Does this unit come with a gas pressure regulator?

The range is supplied with a pre-installed appliance regulator.  Depending on the gas system, a first stage regulator may be required. This scenario is likely when using propane gas, or a high pressure natural gas system. Consult with the licensed plumber installing the unit to determine if one is needed.

Any inline devices, and piping upstream of the range, must be sized appropriately. Improper gas systems will result in poor performance.
