What’s the difference between a Cantonese and Mandarin wok range?

There are distinct differences between Mandarin and Cantonese wok pans.

 

Mandarin wok pans

Feature a single stick handle.

Also known as pow woks or northern-style woks.

They are generally 14” or 16” in diameter.

They are primarily used for single portion cooking.

Cantonese wok pans

Feature two loop handles.

They can have a large range of diameters.

Larger wok pans are used for batch cooking.

Town carries 12” to 30” diameter Cantonese woks pans.

 

 

Town calls each hole a chamber.  You may also hear them referred to as burners, or stations.  Town’s single chamber wok ranges can be customized for use with either Mandarin or Cantonese wok pans.  For larger ranges with more than one chamber, they can be customized to have all Cantonese chambers, all Mandarin chambers, or a mix of both.

Mandarin wok range

When a “Mandarin wok range” is referenced, it generally refers to a wok range with one or multiple 13” chambers.  Our Ecodeck, York, and MasterRange series wok ranges can be configured as a Mandarin wok range.  We also offer other options such as a stockpot wok range, SR-24-M-SS (M is for Mandarin), M-1-JR, and mobile wok cart.

Town’s Mandarin chamber rings have a sloped top.  This shape allows chefs to easily maneuver the wok back and forth to flip food.

 

Cantonese wok range

Conversely for “Cantonese wok ranges,” it generally refers to a wok range with one or multiple chambers larger than 13″.  Town offers nominal Cantonese wok chamber sizes of 16”, 18”, 20”, and 22”.

Our Ecodeck, York, and MasterRange series wok ranges can be also configured as a Cantonese wok range.  The Cantonese variant of our stockpot wok range is the SR-24-C-SS.

 

Which should I choose?

Choose one or more Mandarin chambers if you cook single portions.
Choose one or more Cantonese chambers if you batch cook or use larger woks.
Choose a mixed configuration if your menu or operation requires both.

If flexibility is the main requirement, we recommend you configure your range for larger Cantonese chamber(s).  They can be modified for use use with smaller Mandarin woks by installing the appropriate reducer.  It’s not recommended to adapt smaller Mandarin chambers for use with larger Cantonese woks.
